    What’s the dimensions on these? I was reading that link you posted yesterday and having a hard time imagining boiling… like logs. Is that like a rubbermaid container then?

      Each log is about 6” in diameter and 12” long I would say. It’s a big ass Rubbermaid tote probably 20 gal or so, about 14” deep. It’s 1.5’ x 3’ roughly.

      The reason for sous vide tek is exactly what you mentioned… my “big ass pot” that could hold “a shitload of logs” was actually like 10” deep and could hold maybe 2. I think the only way to do a full boil would be with like a big ass crawfish pot and a propane burner… but even then you’re getting maybe 3 at a time.

      You can sous vide chicken to 135 as long as you hold the temp high for long enough… pasteurization essentially. I’m hoping for the same effect here, instead of a full boil for an hour I’m going as high as I can for 6 or so.

      I won’t be able to get sterile but hopefully give the chicken of the woods enough of an edge to establish before anything else can take hold. It should work… in theory… but starting out with an unfavored species I’m already sledding up hill.

      On the plus side I will learn a lot either way, and I can use the materials for other species that aren’t as finicky.
