Mint chocolate, I agree.
But mint chocolate chip ice cream stands alone.
The 2 flavours are distinct without blending, but do complement (so, I can understand the mint chocolate even if I don’t appreciate it). And the chocolate chips add texture.
It’s a correct flavour, but I wouldn’t go as far as to use the definite article.
Rum and raisin is clearly better.

I would agree with you, but a few years ago I discovered peppermint ice cream.
It has the nice mint, none of the chocolate garbage, and no texture contamination (peppermint is entirely smooth, no chocolate chunks mucking up the enjoy-mint)
It is therefore superior.
If I can’t get the honey lavender flavor from my favorite joint in Seattle, then it’s got to be mint chip.
