Cuban black beans. Soak your black beans overnight. In the morning dice and cook onion, garlic, bell pepper and any hot pepper you like (datil would be traditional, jalapeno is fine, cook to your heat tolerance). Get some seasonings in the oil. Goya sazon will work great if you don’t want to bother with measuring a bunch. If you’re feeling fancy put in a little white wine and let it reduce down. Toss in your beans and enough water to cover. Set to simmer and just check on it off and on through the day. If it looks dry add water, if it looks soupier than you want leave the lid off. Once you’re happy with the beans texture add lime juice and extra seasoning until it tastes perfect and eat up.
